I had been looking forward to September 16th 2014 in a way that I cannot recall having anticipated my birthday or christmas as a boy: This was the date for my first visit to NOMA.
Afterwards; how do I describe NOMA in just a few words - the restaurant which has been multiple times awarded as the best restaurant in the world ? Rene Redzepi has singlehandedly revolutionized the nordic kitchen and started a wave throughout the gastronomic world - so obviously by now, I have eaten in (too) many “new nordic” restaurants, with the same philosophy of organic, local produce on the menu….
But I never tried anything like the experience I had at NOMA. The manifesto on the website indicates that you are in for a special night.

I don’t want to reveal that many details (just as I wouldn’t tell the ending to a great movie) but I can conclude that NOMA easily lived up to my expectations. - From the moment my girlfriend and I, already full of excitement, stepped through the front door, to the amazing staff, the acoustics, decor, ambience and lighting of the room, the experimental menu and accompanying natural wines - to the tour of the kitchen and Rene´s “lab” where the new dishes are developed next to the staff areas upstairs.
All these things as a combined experience is very unique and like nothing I have tried before - and most likely ever will try again.
So, I can conclude that NOMA in fact does live up to its reputation and I feel very lucky to have had the chance to visit this place during its 10th year. You never know when Rene & co. decides to shut down to pursue new adventures, so hurry up…. But good luck trying to secure a booking - it took me years.
