This was my surprisingly longer than two minute interview with Dr. Pamer! The beginning is cut off due to the fact that we immediately started talking and I wanted to get permission to post on Tumblr before recording. He provided me with a lot of great information. At one point I had asked what benefits he personally received from following paleo and he said, "the greatest benefit is being more alive." I loved this statement because in his presence, you can actually feel the truth in that. It was such a pleasure to meet him and am very grateful he took time out of his schedule to sit down with me. Thank you! :)
Paleo Basics
The main idea of the Paleolithic diet is to cut out refined sugars, dairy, grains, and legumes and go waaaaay back to our "hunter and gatherer" days, eating only animal proteins, fruits, and veggies. There are two types of followers to the paleo diet. Strict followers, are ones who will NOT eat dairy, NOT eat grains, and NO refined sugars. If the Paleolithic man wouldn't eat it, neither would this person and everything is usually organic. Loose followers sometimes eat dairy, they will sometimes eat pseudo grains, or even have a cheat meal every once in a while. There are a lot of benefits to switching to the paleo diet. Among some of those are weight loss, less inflammation, more energy (usually) and reduced risk of disease. Eating paleo foods ensures a balanced diet and an increase in vitamins and nutrients from the excess fruits and veggies being consumed. Alongside the benefits, there are also some downsides like it lacks variety, it avoids foods that have great health benefits (like grains), and it is considered low carb. A person on the paleo diet consumes between 35-45g of carbohydrates a day and the Institute of Medicine recommends between 45-65. So if you the person is active or even an athlete, it might not meet the energy needs of this person. It is said, the first month of starting paleo is the hardest, but if it is continued the time after is smooth sailing. There are also a lot of helpful websites that can build grocery lists, help swap foods that aren't paleo for paleo approved ones (LIKE PANCAKES!), and introduce followers to others that can offer support and advice. I found it hard to find many people who know or even partake in the Paleolithic diet in the area and so I researched online and found a bunch of ideas to help stay on track. Ironically, blogging, like tumblr, is one of them. Overall, the research done for this project didn't feel like work. I plan to be a nutrition major and this gave me the freedom to learn about something that interested me and was relevant to my career goals. I even think I am going to try out paleo and see how it can benefit me. Oh yes, I also plan to continue using Tumblr and sharing delicious recipes.
Spicy Slow Cooker Chili!
Ingredients: 1 lb grass fed beef, 1/2 lb of sausage, 1 diced onion, 1 tsp minced garlic, 1 15 oz can of Tomato sauce, 1 15 oz can of diced tomatoes, 1 can of Rotel (hot), 2 Chipotle peppers, 2 tbsp chili powder, 1 tbsp cumin, and salt and pepper to taste.
1.) On medium heat, brown all the meat along with the onions and garlic. 2.) Toss all ingredients into the crock pot. 3.) Cook for 6-8 hours on low or 4-6 hours on high. 4.) I topped mine with red pepper flakes and onion.
This turned out FANTASTIC. I wanted to try this because it was super simple and could cook itself. It was easy to store, reheat, and even pack for lunch. I chose this specific recipe for the flavor I knew it would have and because I had a brand new crock pot sitting at home that I wanted to try. :) Success!
Paleo Meatloaf Cupcakes!
Ingredients: 2 lbs ground meat, 10 oz chopped spinach, 1-2 tsp oil, 1 medium diced onion,6 oz diced mushrooms, 2 diced carrots, 4 eggs lightly beaten, 1/3 c coconut flour, 2 tsp salt, 2 tsp pepper, 2 tsp onion powder, 1 tsp garlic powder, 1 tsp thyme, and 1/4 tsp nutmeg.
1.) Preheat oven to 375° 2.) Heat a pan on medium heat, add oil, fry onions and mushrooms until onions are translucent 3.) Place meat in large mixing bowl and add the rest of the ingredients 4.) Cook 20-30 minutes This makes18 cupcakes.
Side note: I learned from trial and error to fill the cupcake pan 3/4 full. It will overflow and create a horrible mess otherwise. I also will use less thyme because it had such an over powering taste.
I decided to test this recipe and share because meatloaf is my all time favorite food but, bread crumbs or crackers are usually used. Since those types of foods aren’t allowed, it substitutes coconut flour instead. :) These turned out AMAZING and even better than regular meatloaf.

This video discusses “Problems with Paleo”. It is hosted by Abel James, an author about the paleo diet, and has special guest, Dave Asprey, founder and author of The Bulletproof Diet. This is ultimately saying to use the Paleo guidelines as a template for healthier eating. Abel himself follows the guidelines, but has found as an individual, adding some dairy gets him to a higher performance level. This concept is different because in the first video we learned dairy is not a part of the paleo diet. The main message in this video is every body is different and shouldn’t follow a diet that mimics one of someone else, but tweaking it to perfect what nutritionally works for them! #osumdocpro2015
This is a very educational video on what exactly the Paleo diet is, posted by Dr.Oz. It explains what foods should be consumed and how much. If someone was interested in trying out the Paleo diet, this would be a great tool for beginners. #osumdocpro2015
PALEO
I've decided to do my documentary project on the Paleo or "caveman" diet. It seemed fitting considering I am going to school for Nutrition and I have heard quite a bit about it, positive and negative. I have done a bit of research and planning. At the moment I have found some great websites for recipes and a professional who teaches classes on this specific subject. I am going to interview him in the next few days and actually try some of these recipes myself. Omnomnom. #osumdocpro2015
