January 2020, a great and delicious Tonkotsu X, in Kanada-ya, London
Life before quarantine in London (January, 2020), the five-star seasonal Kakuni Tonkotsu. Tonkotsu broth with caramelised black garlic mayu was quite amazing!
I visited the Mikaku Izakaya in Glasgow/Scotland. Tasted the Miso Black, a tonkotsu ramen with a miso base. For a tonkotsu, thought it missed something, and the dry chicken breast gave an horrible arrange with the other toppings. The exception was the egg, well curated, perfect. For me, the broth in the Veg Ramen seemed to be more balanced, especially with the crunchy pak-choi. Rate: ***

My last visit was at Furikake restaurant, in Vila Mariana, São Paulo. The misso lamen was a good japanese-brazilian surprise, nice brought with an alcooholic taste in the tyashus. Love the fresh moyashi in between the toppings. The homemade furikake also gives a personality to the ramen. Rate: ***
