This morning we were expecting the plumber to make his third house call to fix the bathroom drain…luckily we also got a new faucet out of it. Anyhow, I needed something to do this morning that would give him some space in our “Jack and Jill” lavatory. This is what I came up with:
1 can rinsed black beans, 1 cup chopped mango, 1 cup seeded and chopped cucumber, diced jalapeno to flavor, 1/4 cup diced onion, 2 tbsp lime juice, 1/2 tsp each cumin and salt; 6 servings at 71 calories each.

DISCLAIMER I am new to making a (semi) legit attempt at actually blogging on Tumblr. That being said, I apologize for the abrupt ending to my Holy Guacamole entry; there was more to it but somehow it got deleted and I’m not going to put anymore time in to it. That was yesterday, know what I’m sayin’?
So we woke up to a fridge and freezer on the fritz. Aaaand we’re in the process of buying this lovely cottage that we’ve been renting. Normally, this could be cause for not only concern, but probably some tantruming and tears as well. HOWEVER, we are in a very uniquely, fabulously lucky position to be the tenants of Mrs. Virginia Edmunds. This means that rather than be screwed, we in fact are going to be the beneficiaries of a brand new FREE fridge and freezer with……(drumroll)… …an ice-maker upgrade!! I truly don’t know if I would have done this well were I a Price is Right contestant. In addition, I have to make a smorgasbord of food before it spoils 😁

Holy Guacamole
So I began the day early, for a spring break Saturday. It was the kind of morning that is easy to love; warm and breezy, quiet and sunny. It took no time at all to decide to slip quietly into the kitchen and do some good clean cooking with yesterday’s groceries. To give myself some fuel (of course after giving Lola her breakfast with a squirt of salmon oil, both a Benadryl and Zyrtec with peanut butter, and her Cosequin supplement, AND salad with blueberries and baby carrots, hay, and pellets for the guinea pigs), I began with a flat-belly breakfast:
Half of a ripe avocado smashed onto a piece of toast, layered under two 1/2 inch slices of ripe tomato, and topped with a 1/4 cup of cinnamon-cranberry goat cheese (277 calories).
Now on to operation “weekend food prep”. I plugged in the blender, and processed together 2 cans of garbanzo beans (1 can drained, 1 with liquid), 4 tablespoons each of olive oil and tahini, 1 teaspoon each of cumin, paprika, citrus salt, and dried basil, and 4 slices of pickled jalapeño with a tablespoon of its juice. I then spread a single layer of kalamata olive pieces over the top. Ta da, 6 generous portions of Kalamata Hummus (197 calories each).
