Southern Mac
Prep and Cook Time 45 min Ingredients:
1 ½ cups milk ¼ cup butter (do not double butter when doubling recipe) 4 tsp. all-purpose flour 2 ½ cups shredded sharp cheddar cheese ¼ cup mozzarella (or any other cheese) 1 medium tomato, chopped Optional; ¼ tsp cilantro 2 whole Anaheim peppers 3-5 slices bacon, crisp cooked and crumbled 1 tsp garlic Optional: ¼ tsp Cayenne pepper powder 8 ounces elbow macaroni, cooked and drained
Directions: Preheat oven to 375°. Whisk milk, butter and flour in large saucepan; bring to a boil over medium-high heat, whisking frequently. Reduce heat and cook, stirring occasionally, until thickened, about 5 minutes.
Stir in remaining ingredients except macaroni and ½ cup of cheddar cheese. Cook, stirring occasionally, until cheese is melted. Stir in macaroni, then turn into 8-inch baking dish. Sprinkle remaining cheese on top. Bake until golden brown, about 10-15 minutes.
Tip: add different cheeses, peppers, or meats! (i.e; cheddar+provolone, jalapeño, pulled pork, tri-tip)
