For those on a Paleo diet or anyone searching for a healthier dessert option, this Paleo Birthday Cake recipe provides a grain-free, dairy-free, and refined sugar-free substitute for classic birthday cakes.
Ingredients: 2 cups almond flour. 1/4 cup coconut flour. 1/2 cup coconut sugar. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 4 eggs. 1/3 cup coconut oil, melted. 1/4 cup maple syrup. 1 tablespoon vanilla extract. 1/2 cup unsweetened almond milk. 1/2 cup unsweetened shredded coconut optional, for topping. Fresh berries optional, for garnish.
Instructions: Preheat the oven to 350F 175C. Grease and line two 6-inch cake pans with parchment paper. In a large mixing bowl, whisk together almond flour, coconut flour, coconut sugar, baking soda, and salt. In another bowl, beat the eggs, then add coconut oil, maple syrup, vanilla extract, and almond milk. Mix until well combined. Gradually add the wet ingredients to the dry ingredients, stirring until a smooth batter forms. Divide the batter evenly between the prepared cake pans. Smooth the tops with a spatula. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Remove the cakes from the oven and let them cool in the pans for 10 minutes before transferring them to a wire rack to cool completely. Once cooled, frost the cake with your favorite Paleo-friendly frosting, and optionally top with shredded coconut and fresh berries. Slice and serve! Enjoy your Paleo Birthday Cake!
