1 rotisserie chicken shredded (didn't use the full thing, just eyeballed for the ratio)
2 tsp olive oil
2 Tbsp unsalted butter
1 1/2 to 2 Tbsp cajun seasoning
The cajun I threw together as I don't have dedicated cajun seasoning:
Garlic, Spices (Including Black Pepper, Cayenne Pepper, Oregano, and Chili Pepper), Sea Salt, Onion, Paprika, and Red & Green Bell Peppers.
(I was not going for accuracy, I just shook each seasoning in until it looked right) and for green peppers I used green chiles
A bunch of sundried tomatoes (at least 8) diced
Divide to place into noodle side and chicken side)
1 1/2 cup almond milk + 1 TBSP corn starch (this is for the chicken side)
1 cup almond milk + 1 TBSP corn starch (this is for the noodle side)
1/2 cup grated parmesan cheese (both sides)
2 Tbsp parsley, finely chopped, to serve
Instructions
Undercook your noodles, they will keep cooking while you prepare the rest of the meal
Toss chicjen in cajun seasoning
In a large non-reactive skillet*, heat 2 tsp oil over medium-high heat
Add in the almond milk+corn starch add the parmesan once the corn starch is fully incorporated
Add the chicken and cooked pasta to the sauce and toss until combined and pasta and chicken are warmed through. Add warm reserved pasta water if desired to thin the sauce. Serve with freshly grated parmesan and chopped parsley.

*I separated the noodues and chicken to different pans to get both better sauced up.

soak diced carrots in this sauce with 2 TBSP water and microwave for 3 mins on high in a steamer. uncover and transfer to air fryer. air fry for 10 mins at 375F. toss and go another 10 mins.

I modified this. I did not use apple cider. rather I used 1 cup of apple juice and the juice from the apples. I used a food processor to grind the apples and removed their juice for the caramel.

I also doubled the rice (jasmine) but I believe this needs another cup at least.
I sauteed the mushrooms and onions in 3 tablespoons of red wine vinegar, I also added 1/4 cup of red wine vinegar to the rice as it was boiling.
The smoked paprika was only blended into the onions, I believe this was what gave everything such a subtle flavor along with the tomatoes. I also took away the teaspoon of salt.
