4 cups flour 1/4 cup warm milk 1 tbsp dry instant yeast 1/2 cup vegetable oil 1 tbsp sugar 1 tsp salt 1 cup mineral water for its filling: Half bunch of parsley 1 1/2 cup feta cheese for coating their top: 1 egg yolk Poppy seeds INSTRUCTIONS 1. Mix sugar and yeast with milk. Combine all the dough ingredients including this milk mixture and mix them well. You can add a little more flour or mineral water if either of them is not enough. You should have a pliable and nonsticky dough. Cover it with a moist cloth and let it rest for 45 min. 2. Chop the parsley and mix it with cheese. 3. Take a small piece from the dough and flatten it with your hands. You can do this on the counter. Put a tsp of cheese mixture on it and close it up folding the edges upwards like a bundle. Do the same for the rest of the dough. Place a parchment paper in a baking tray and place the pogacas on it. The folded side of pogacas should be at the bottom to have a ball shape. 4. White Beans with Meat is a very traditional and common dish in Turkey, especially when it is served with pilaf and pickles. Turkish people just love this dish. 2 cups white/butter beans ½ lb beef/lamb meat, chopped 2 onions, chopped 2 tbsp oil 1 tbsp tomato paste 1 dried red pepper/green pepper, chopped ½ tsp baking soda (optional) ¼ tsp chili red pepper flakes (optional) 1 tbsp salt to taste 1 cup hot water Wash white beans, place them in a pot and cover with water (approximately 1 inch above the beans). Leave them in water overnight or for at least 12 hours. The next day, cook them with the same water till beans get soft over low heat. You could add baking soda to have softer beans quicker. When they are soft, add ½ tbsp of salt. In another pot, sauté chopped meat with oil till they are brown. Then add onions and sauté for 2-3 minutes over medium heat. Stir in peppers and tomato paste. Add one cup of hot water and the remaining salt, and then simmer till the meat is soft. Transfer the cooked white beans into the pot. Simmer for 10 minutes over low heat. Serve White Beans with Meat, with pilaf or over pilaf. Also cacik and pickled vegetables are good to go with this recipe. (260ml) lukewarm milk 1/4 cup (50g) butter, at room temperature 1 large egg zest of 1/2 organic lemon 1/2 tsp. salt For the egg wash: 1 egg 1-2 tbsp. milk ----- 1. For the filling add milk, sugar, poppy seed, semolina and the lemon zest to a saucepan. Heat the mixture while stirring constantly (or it will burn). The mixture will thicken after a while. Remove from the heat and add vanilla extract. Incorporate well and then set aside to cool down. 2. In a bowl mix milk with yeast and a teaspoon of the sugar until well combined. Let rest and rise in a warm place for 15 minutes. 3. Sift the flour on your working surface and make a big well in the middle. Add the yeast milk, remaining sugar, butter, egg, salt and lemon zest and mix all with the flour. Knead for 10 minutes until you get a nice smooth dough. Place in a bowl and cover with a kitchen towel and let rise in a warm place for 45-60 minutes. 4. Preheat the oven to 350˚F (175°C). Roll out the dough in shape of a rectangle on a floured surface. The long side should be about as long as your baking sheet is wide. Spread the poppy seed mixture on top (if it is too thick, add some milk to make it softer). Form a roll, starting from the longer side of the rectangle. Place on a baking sheet prepared with baking parchment. Cut the roll lengthwise into two strings with a sharp knife. Braid the two strings – don’t worry if the filling can be seen, that’s fine. Mix the egg with milk and brush the loaf and bake for 30-35 minutes.
