Ro’s Candy Popcorn
About 8-9 cups
Total Time: 45 minutes
Works for mushroom popcorn, microwave popcorn, bagged popcorn, or air-popped kernels.
Ingredients
• 8-9 cups popped popcorn
(Microwave popcorn, store-bought already popped popcorn, kernel popcorn, or mushroom popcorn all work great.)
• 1 stick salted butter
• 1 cup granulated sugar
• ½ cup light corn syrup
• 1½ teaspoons flavoring
• 3–5 drops gel food coloring of your choice (or more if you double the recipe)
• 2–3 drops liquid gel white food coloring (optional but helps brighten and intensify colors)
Instructions
🩵1. Prepare Your Popcorn
Pop 9 cups of popcorn using your preferred method. Place it in a large mixing bowl and set aside.
🩷2. Make the Candy Coating
1. In a medium-sized pot over medium-high heat add:
• 1 stick salted butter
2. Let the butter fully melt.
3. Add:
• 1 cup granulated sugar
• ½ cup light corn syrup
4. Allow the mixture to simmer for 2 minutes without stirring until it begins to bubble.
5. Once bubbling, add:
• 1½ teaspoons flavoring
• 3–5 drops of your chosen gel food coloring
• 3–5 drops white gel coloring (optional but recommended for vibrant colors)
6. Mix well until the color and flavor are fully combined.
7. Remove the pot from the heat.
🩵3. Coat the Popcorn
1. Your popcorn should be ready in a large bowl.
2. Pour the hot candy mixture over the popcorn.
3. Immediately use a silicone spoon or spatula to Mix, Fold and Flip you popcorn.
Continue until all popcorn is fully coated.
Some candy might fall to the bottom, keep folding until everything is covered evenly.
🩷4. Bake the Popcorn
1. Preheat your oven to 250°F.
2. Spread the coated popcorn onto a baking sheet in an even layer.
3. Place in the center of your oven and bake for 30 minutes.
4. At 15 minutes, remove the popcorn and Flip it and Stir it
• Scrape any melted candy from the pan and mix it back into the popcorn
5. Return to the oven to bake for the remaining 15 minutes.
🩵5. Cool & Finish
1. Remove from the oven and give it one final mix while hot.
2. Let it air dry and cool for 15 minutes.
3. Once cool, the popcorn will be crisp, crunchy, and ready to package.
✅ Packaging Suggestions
• Airtight containers
• Cellophane bags
• Mason jars
• Popcorn tins
• Heat-sealed treat bags
✅ Shelf Life of Homemade Candy Popcorn
When stored properly in airtight packaging, flavored candy popcorn stays fresh for:
7–10 days
(and often up to 2 weeks depending on humidity, storage conditions and if your candy mix was cooked properly).
Humid environments may soften the coating sooner, so airtight packaging is important. Enjoy ❤️
