Paleo - Sprouted quinoa almond buns! lately I have been really getting in to sprouting things. I started out sprouting some green lentils and they turned out so wonderfully! So I thought why not go straight to sprouting quinoa? I absolutely love quinoa and it is so rich in protein. Well turns out i really dont care for sprouted quinoa. They didn't taste as delicious and crunchy as the lentils I had sprouted before. So i tried to come up with a use for them, since I am not one for throwing out food! And I thought why not bake them?? And these buns turned out ridiculously delicious! Here is an approximate recipe for 12 buns: I used 4 eggs About two cups of almond flour About 4 cups of sprouted quinoa A pinch of salt And oil for the muffin tin I mixed the eggs together well and beat in the almond flour, then I put in the sprouts and put the mix in the oiled muffin tin! I baked them at 175° for about 25 min. Eat them as is or cut them and spread them with goats cheese! Yum yum!
