McArabia Halloumi On Fleek

When you're in Saudi chances are you'll end up in one of those ubiquitous mom & pop eatery which is called Kabsah (in vernacular) joints. And its ridiculously good; you eat with you're bare hands and just dig in, for me there's a lil bit of stoned feeling whenever you're out eating inside these joints which reminds me so much of Morrocos's joints version and really really locally spontaneously good as you could get. Here's the thing that I was a lil perplexed about, it's mostly run by the Afghans, Pakistanis, Yeminis and sometimes South Asians. These humble joints were somehow unapologetically become part of the local food culture that are usually unappreciated. My personal all-time favorite was bamiya (which is an okra stew dish) with roast chicken called kabsah that usually comes with an options of rice (basmati-type) either white or the yellow one which I learned was actually cooked in an insane amount of fuckin regular oil instead of water, hence, the yellowish color --this combination for me is an imperfect-perfect kind of symbiosis which represents the kind of social fabric the country currently has -- through to their local food. During Ramadan, the offerings were updated and added some specialties/local delicacies and give out dates (for free) before breaking fast if you dine inside. For me, this is the typical staple food of the Saudi masses which is, yeah, a little bit uncelebrated but still the most local you could get around the Kingdom.
