These chocolate favor boxes were filled with our Orange Blossom Honey truffles and the new Raspberries & Cream:
Orange Blossom Honey Truffle:
The honey ganache is formulated by combining organic cream with unique Spanish honey from Cadiz Spain via Puremiel, along with fresh local organic cream and specially formulated 50%+ chocolate that complements its tastes, but does not overwhelm it. The truffles are covered in two layers of dark chocolate and topped with wild flower bee pollens from the pacific northwest or honey crystals.
Wine Pairing: Champagne, Riesling, Moscato D’Asti, Coffee, Black Tea, Dow’s: 20 Year Tawny & 2002 Colheita, Fonseca: 10 Year Tawny & 20 Year Tawny, Glenmorangie - Nector d’Or., A Midwinter Night’s Dram, Whistlepig - Old World 12., Sound Brewery - Old Scoundrel.
Raspberries & Cream Truffle:
Raspberries, once a midsummer’s crop and partaken only by the rich in Medieval Europe, our Raspberries & Cream is available year round and is made with organic cream, red raspberries, sugar and our specially formulated 33%+ light milk chocolate that enhances the natural flavors and sweetness of the raspberry, but not overwhelm it.
The Red Raspberries & Cream ganache is typically enrobed in our 40%+ BAUTA™ White Chocolate or one of our fine chocolates below and topped with raspberry bits or powder.
Wine Pairing: Riesling, Beaujolais, Champagne (demi-sec), Saumur-Champigny, Côteaux du Layon, Barolo, Ruby Port.
