science Tumblr can anyone explain why hot food tastes different from cold food? And I don’t mean OLDER food or REFRIGERATED food but like. A bowl of comfortably warm pasta VS pasta that’s several degrees cooler. Also specifically why is hot food blander? The taste is more powerful in cooled food and I cannot explain to my baffled family
"Flavor" is a combination of several things including taste (the chemical information your tongue receives), scent (the chemical information your nose receives), and mouth feel (including textures and temperatures).
So in some sense, flavors are different at different temperatures simply because temperature is part of flavor. But that doesn't seem like what you're talking about.
It sounds like you're talking about the taste and/or scent aspects of flavor being different at different temperatures. And if I had to guess I'd say that probably applies more to the scent aspect than the taste aspect. Warmer food is probably releasing more compounds into the air for the nose to process so the scent aspects of the flavor might become more pronounced.
But if that were the phenomenon we're talking about I'd expect COLD food to be blander, not the other way around as you say...

Sorry, this is all wrong. Flavor is a property of particles with 1/2 spin which have identical copies (up to present experimental data) with different masses, and which copy is being discussed is called the flavor.

Actually though, come to think of it, I have a genuine guess. Perhaps it has to do w the specific flavor receptors in play and how the molecules in your pasta bind to them? Like if this isn’t happening with ALL food, it’s possible there’s an optimal temperature for which certain taste receptors bind to the molecules on your and trigger nerve response? Too fast and too much energy to bind and trigger it, too cold and there’s less contact? Not a biophysicist and wouldn’t take this as fact, but that’s a guess.
This is all very appreciated but it’s ALL food, all food tastes better cold than it does warm, once it’s cooked or microwaved it’s all just kinda salty or oily or whatever. Cold food has a stronger or better taste almost every time and the science says it should be the other way around. My best guess is tism but my brother keeps calling me an animal
