The rich peanut sauce in this slow cooker satay beef recipe is full of flavor from the soy, lime, and coconut that are mixed in. Beef that is very tender is cooked slowly until it is just right. This makes a very savory dish that goes well with rice or noodles.
Ingredients: 1.5 lbs beef stew meat. 1 onion, thinly sliced. 3 cloves garlic, minced. 1/2 cup peanut butter. 1/4 cup soy sauce. 2 tablespoons brown sugar. 1 tablespoon lime juice. 1 teaspoon ground ginger. 1/2 teaspoon red pepper flakes. 1/4 cup coconut milk. 2 tablespoons chopped peanuts for garnish. Cooked rice or noodles, for serving.
Instructions: Put the beef, onion, and garlic in a slow cooker. Add peanut butter, soy sauce, brown sugar, ginger, red pepper flakes, and coconut milk to a small bowl. Add and mix them all together. Pour over the beef mix. On low heat, cover and cook for 6 to 8 hours, or until the beef is soft. Put it on top of cooked rice or noodles and sprinkle chopped peanuts on top.
