So Nate and I have decided to go mostly vegetarian (I cannot give up sushi), and I have been trying to keep his interest without overwhelming him with tofu. Tonight I made pasta primavera which was super easy. Preheat the oven to 400F, cut up baby squash and toss in garlic salt, olive oil, a pinch of thyme and ground sage and put on a cookie sheet. We used convective to get that nice brown crispy umami crust on the squash, cook for 15 minutes or less depending on how small the pieces are.I used a box of the skillet fettuccini from Barillo called Pronto, and instead of using all water to cool the pasta I substituted with two cups of vegetable stock and one cup of water. Midway through the cooking I added a can of roasted Marzano tomatoes with the juice. Make sure the pasta has absorbed all the liquid and toss in some fresh basil. When plating put the squash on top of the pasta with some Parmesan cheese and you have a lovely 30 minute dinner...no joke!
