Mark bumps into Seamus not long before a fight breaks out on the street and leads him away to ensure he's unharmed. While they're getting away from the brawl, he introduces himself and invites him to the Snake Eyes Club.
Perhaps the establishment that Seamus is mistaken for being a new employee of is Violet's house. She notices he's new and starts up a conversation with him. She later trusts him not to tell anyone when she sneaks out to the Snake Eyes Club, asking if she'd like to join him.
I also feel like Seamus might get along with Oliver when it comes to the 'sneaking away to start a new life' thing!! If he met Oliver, it would likely be in a casual setting where he doesn't give away that he's the owner of a successful Cabaret right off the bat.
