When you think of Spaghetti al Pomodoro, you probably picture a slow-simmered sauce of crushed San Marzano tomatoes cooking for hours until rich and dark.
At Ristorante Quattro Passi, the three-Michelin-starred restaurant perched on the cliffs of Nerano along Italy’s Amalfi Coast, Chef Fabrizio Mellino proves that sometimes less really is more.
His signature Spaghetti al Pomodoro abandons canned tomatoes, heavy purées, and long cooking times altogether. Instead, sweet cherry tomatoes, whole cloves of garlic, fresh basil, extra virgin olive oil, and just enough water are gently simmered together, creating a fragrant golden tomato broth rather than a thick sauce.
The result is remarkably fresh and intensely flavorful. The tomatoes release their natural sweetness into the broth, while the basil and garlic gently perfume the liquid without overpowering it. It’s a deceptively simple technique that allows every ingredient to shine.
Once gently crushed and strained to remove every trace of bitter seeds and tough skins, you are left with a liquid loaded with natural glutamates and bright acidity.
The real magic, however, happens in the pan. This is where the sauce becomes silky rather than watery, as the starch released from the pasta naturally emulsifies with the olive oil and tomato broth.
At this point, I like to refrigerate the strained sauce overnight. The flavors seem to come together beautifully, although you can certainly use it immediately.
