Happy National Eat Your Vegetables Day, Every Baby!
Since today is a day about eating veggies I wanted share a list of veggies that you may not have thought of! This are easier ways to eat your veggies so you can be big and strong!
As a fellow picky eater I understand it can be hard to get you daily intake of veggies, and it doesn't help if you live in a food desert or come from a less affluent background. This is way I created a list to give ideas of things we can incorporate into our diets so we can be big and strong!
Remember these are just suggestion, if you don't want have to use them. I just wanted to give more ideas for people use.
Salsa- This counts as a vegetable because it is basically cut up veggies. Pair this with chicken or chips that count as serving of vegetables.Â
 Potatoes! They have tons of nutrients and fiber. You can make many different dishes from potatoes.Â
Canned pumpkin, pumpkin is categorized nutritionally as veggatble even though itâs technically a fruit. Using canned pumpkin can give you a serving of vegetables.Â
Pickles, They are just a pickled cucumber. If they are fermented pickles they it helps with gut health. Fermented foods are known to be good for guts. Vinegar pickled pickles are good too. They are still vegetables.Â
Corn- It is still a vegetable and you can get it in a can or at the produce market.Â
Guacamole, just like salsa it is just bunch of veggies that mushed up and put together. Itâs versatile, you can eat with chips, eggs, toast, etc.Â
Kimchi and Sauerkraut, they are both a form of fermented cabbage. This may not fit the picky eaters part of this list but they are a good veggie to eat. They fermented so not only are they acting a serving of daily nutrients but they are also helping your gut health. If youâre a fan of Korean food then pile on that kimchi. Some people eat Sauerkraut with their sausages, so you can get your daily serving of veggies by topping your sausage or hotdog with it. Â
Tomato Paste- I add tomato paste in my tomato sauce. This adds a bit of sweetness to the sauce. Tomato paste is also a serving of veggies.Â
Pasta Sauce - whatever sauce you use is serving of veggies.Â
Onions- Apparently some people donât believe that onions are vegetables? They are though. I like to add them to my breakfast potatoes, or when i bake chicken. You put them in sandwiches.
