So they said that Lance will end up with someone who's self-assured and I see a lot of people saying Keith isn't and therefore Klance won't be canon.

The great thing about Klance is that they help each other grow and develop and people. Last season Lance was literally helping Keith become more self-assured and confident with himself and his choices as a leader. They're not saying Keith has to be fully self-assured NOW, but he's already been shown to be developing a sense of self-assuredness. By growing together and helping each other they're forming not only a healthy friendship but a healthy romance. That's why I love Klance so much.
