--- old habits dying for love ---
We all know of Hook's drinking problem, mainly needing to fulfill the pirate stereotype, but also explainable by how he faced the traumatic events in his life (abandonment, loss of his brother and love...). We see Pan making fun of it, Emma questioning it sometimes (though she mostly still would take a swig) etc. — but with this scene something really changed...
Killian stopped carrying his flask with him.
When we see him severely drinking again when he was struggling with how and if to tell Emma about his secret he needed to get a bottle at Granny's...
And when he wants to leave to further better himself and was ultimately send away on the Nautilus and Emma packs up his belongings, the flask is amongst the things he didn't even try to take with him in the first place...
Because he really wanted to give up rum/drinking as she adviced...

And as a side note --- I really love when Emma says "We're gonna switch to water" ... There's not something like "You've to do it" because they are a team & she does want to tackle the problem together and support him. And also, she wasn't oblivious that she indulged in it too and wanted to change that as well.
That's why I firmly believe that this is one of the reasons she didn't really wanted to go out drinking with Regina and Snow (and later chose only beer and not any cocktail or liquor).
