JICAMA!!! (part two)
Ok, so my favorite sister (well, only sister for that matter, but still my favorite) sent me a message asking me to elaborate on my previous jicama post. I am sorry if there was any confusion about what jicama was, and I hope to fix any confusion with this post!
Like I mentioned in my previous post, I just discovered jicama. My friend brought one over and served it with guacamole at a bachelorette party that was held at my house a couple weeks ago. Unbeknownst to me, she left the leftovers in my fridge. I discovered them the following day when I was scrounging for a snack. We were running on empty since the following day was grocery day. ANYWAY, the moral of the story is that I discovered some cut up jicama in my fridge. And I proceeded to fall in love with this amazing root!

So, jicama (pronounced hi-ku-muh) is a root vegetable. It looks like an overweight potato! Mine looked a lot like the picture on the top right and cost me about $1.50 (can't beat that!). I have not experimented with cooking the jicama, mostly because it is amazing raw! I peeled it with my potato peeler, cut it in half and then cut it into thin, chip-like pieces. The prep took me all of 5 minutes from start to finish. I put it all in a glass bowl and have it in my fridge for when I need a small snack (like last night while I was wasting away before dinner!)
What does it taste like, you may be asking? It is a very mild sweet taste that works well with a variety of different flavors. I have been eating it plain, with hummus, salsa, or guacamole. So good!
But I think what I like best about it is the texture. It has a great crunch that reminds me of a carrot mixed with a potato mixed with an apple! I find that crunchy snacks are the very best for me since I started Weight Watchers because it gives me the same mental satisfaction of snacking on chips or crackers. It also takes longer to eat!
Best part about jicama? ZERO POINTS! WW people, you can't beat that!

EDIT: I forgot to mention where I found it! I found it at my regular grocery store (Dominicks) and it was in the produce section, near the squash fresh ginger. Along the wall (those kind that rain on the veggies, but I don't think it rained on this section) but it wasn't in the middle piles of tomatoes and bananas. Hope this vague description helps!
