Saturday morning I woke up really wanting waffles. But not just any old golden, crispy Belgian waffles, I wanted “healthy” waffles. After looking up a myriad of recipes I decided to make some out of oats and bananas. Since I’m not keto anymore I figured I’d take advantage of the deliciousness of those two ingredients. I used this recipe as the base.
My first batch turned out pretty nasty. Far too salty. Which is weird because I usually add salt to most foods after the fact. Sadly, I scooped out a second batch before tasting the first. Those two waffles went straight in the trash. Before making the third waffle, I added in a scoop of peanut butter, a few tablespoons of almond flour and about a tsp of sugar to the batter. These additions made the waffles EXACTLY what I was craving. So so so so good. I can’t wait to make them again.
After erp’s nap, we went out for a 3 mile walk in the 32 degree weather. Thankfully, in the sun when it wasn’t windy, it didn’t feel that cold. Erp was asleep for almost the entire walk and it was delightful to get out and enjoy the sunshine together.
The only thing on my agenda today is to take a trip to the grocery store. I have to take advantage of the fact that Kevin’s home and I’m not working so I can go during the day, since I don’t like going during the work day or when I don’t have childcare. I’m honestly so excited for this tiny trip alone. Oh the little things :)
