Confession: I highly dislike mushy green beans. Every single year, I’ve been asked to post a proper green bean casserole recipe, plus I’ve opted out because the thought of soft green beans in canned soups with fried onions just does not do it for me. I’m really particular about how I like my eco-friendly beans. I love them roasted and prepared until tender-crisp, sauteed with a little garlic and essential oil , and even in a salad . But frozen or even out of a can – I could do without them.
I know so many of you love this particular popular Thanksgiving side dish. Right after many requests, I was inspired to provide it a try only made totally from scratch. Boil a large pot associated with water, when boiling add eco-friendly beans and blanch for 2 mins (or 6-8 minutes if you like all of them softer). Drain in a colander plus rinse under cold water to prevent them from cooking.
Meanwhile make the topping, heat a medium-sized skillet over moderate heat. Add the particular shallots and sauté about 3-5 minutes, stirring occasionally until fantastic brown.
Reduce warmth to medium-low, add breadcrumbs, grated cheese and thyme; sauté until golden brown, regarding 5-6 minutes, stirring frequently, cautious not to burn.
Preset the oven to 375°. Gently spray a 13 x nine inch baking dish.
Heat oil in a large sauté pan over medium-high heat. Include shallots and sauté 1 to 2 mins. Add mushrooms, season with sodium and pepper and sauté 6-8 minutes, stirring occasionally.
Sprinkle flour over the mushrooms, mix constantly for about a minute, then gradually add chicken stock, then dairy.
Bring to a low steam, and cook stirring occasionally till thickened, about 3 minutes. Mix in Romano cheese.
Add blanched green coffee beans and mix well, season along with salt and pepper as required; pour into prepared baking meal.
Top with toasted breadcrumbs and bake about 30 minutes.

If you’ve ever had a Mama Chia beverage and enjoyed it, then I think you will love this drink! The chia seeds in this refreshing watermelon beverage add a healthy dose of powerful antioxidants, omega-3s, dietary fibers, as well as complete protein, calcium and magnesium. Another chia favorite of mine is my Kale Banana Chia Hemp Superfood Smoothie.
So many people are sharing pumpkin recipes this week, but it’s in the 80’s here in New York, and I’m still in denial that summer is coming to an end. I’ve been making this beverage all summer, and thought I would share it with you today – enjoy!
Chia Watermelon Fresca
Prep Time: 5 mins
Total Time: 5 mins
Chia Watermelon Fresca is a refreshing summer beverage made with watermelon and chia seeds.
1 1/2 cups seedless watermelon cubes
3 tbsp water
1 tbsp chia seeds
1 slice lime, for garnish
a sprig of mint, for garnish
ice
In the blender combine the watermelon and water and puree until smooth.
Stir in chia seeds and let them sit for about 5 minutes.
Stir again, and let sit for as long as you like. The more it sits, the more gel-like the seeds become.
Pour into a glass over ice and garnish with lime and sprig of mint.

How to preparation this gratin ahead:
This dish can be prepped a couple days ahead, everything from spiralizing the veggies, roasting them and making the particular white sauce. Once you make the spices, pour it over the vegetables plus top with cheese. Loosely protect with foil so it doesn’t contact the top and refrigerate. When prepared to bake, remove from the refrigerator an hour or so before, keep foil on plus bake until the vegetables are moderately dewrinkled through and the cheese is dissolved, about 350F 30 minutes.
Spiralizing vegetables as so much quicker than cutting, here are a few tips on how to spiralize hard vegetables.
Get a good quality spiralizer. I have the particular Inspiralizer (affiliate link) which I love and it is sturdy enough to hold up to difficult vegetables like butternut and fairly sweet potatoes.
Make sure the smaller sized vegetables such as carrots and turnips are at least 1/2 ins in diameter.
Preparation them ahead and keep them covered in zip lock bags, they are good refrigerated for several days.

Spiralized Winter Veggie Gratin is the perfect holiday gluten-free part dish! Made with spiralized veggie gratin is made with sweet potatoes, butternut squash, carrots, and parsnips plus topped with a white sauce plus Gruyere cheese.
Olive oil spray
1 moderate , 7 ounce sweet potato, peeled and spiralized
1 lb carrots , 1 . 5″ in size, peeled and spiralized
one ½ pounds whole butternut corn , peeled and spiralized
two medium , 7 ounces total parsnips, peeled and spiralized
one ½ tablespoon olive oil
four teaspoons fresh chopped thyme
1 tablespoon fresh chopped oregano
3 tablespoons fresh cut Italian parsley
1 ¼ teaspoon Kosher salt
Newly ground black pepper , to flavor
½ tablespoon butter
1/3 cup chopped shallots
3 teaspoon all-purpose flour , or even gluten free flour for GF
1 cup fat totally free milk
1 tablespoon grated parmesan cheese
2 1/2 ounces grated Gruyere cheese , separated
Preset the oven to 400 degrees Farrenheit. Spray a 9” x 13” casserole dish with olive oil.
In a large bowl, mix sweet potato, carrots, squash plus parsnips.
