Ingredients: 2 cups all-purpose flour. 1 1/2 cups granulated sugar. 1/2 cup unsalted butter, softened. 1/2 cup vegetable oil. 4 large eggs. 1 cup buttermilk. 2 teaspoons vanilla extract. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/2 teaspoon salt. 1/2 cup cocoa powder. 1/2 cup hot water. For frosting:. 1 1/2 cups unsalted butter, softened. 4 cups powdered sugar. 1/2 cup unsweetened cocoa powder. 1/4 cup milk. 2 teaspoons vanilla extract. Assorted food coloring for decoration.
Instructions: Warm up the oven to 350F 175C and put paper liners in a cupcake pan. Put the cocoa powder, baking powder, baking soda, and salt in a bowl and mix them together. Put away. Mix the sugar, softened butter, and vegetable oil in a different bowl until the mixture is light and fluffy. One egg at a time should be added and mixed well after each addition. Add the vanilla extract and mix well. Mix the dry ingredients with the wet ingredients in batches, adding buttermilk between each batch of dry ingredients. Start with the dry ingredients and end with the buttermilk. Don't mix any further than that. It will be smooth after you add the hot water and mix it in. The batter should be about two thirds of the way up each cupcake liner. In a hot oven, bake for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean. After the cupcakes have cooled in the pan for a few minutes, move them to a wire rack to cool all the way down. For the frosting, beat the butter until it is smooth and creamy. Powdered sugar and cocoa powder should be added slowly, alternating with milk and vanilla extract. Mix the ingredients together until they are smooth and fluffy. Put the frosting into bowls and add food coloring to make it look nice in different colors. When the cupcakes are completely cool, frost them with any colors and designs you want. Serve these beautiful cupcakes and enjoy them!
