overnight salad
this retro salad is the perfect make-ahead side dish. great for a potluck or holiday. definitely a delicious splurge with the bacon and cheese!
yields 12 servings
1 1/2 heads iceberg lettuce
4 ribs celery, chopped
1/2 green bell pepper, chopped
1/2 red onion, chopped (optional)
10 oz frozen peas
1 1/2 cups mayonnaise
2 tablespoons granulated sugar
1/2 cup finely grated parmesan
1 cup shredded cheddar cheese
1 cup bacon, crisply cooked and chopped (about 10 oz)
In a medium bowl, combine mayonnaise, sugar and parmesan. Season to taste with salt and pepper. Dressing should be a little salty as it will need to flavor the entire salad.
Tear lettuce in small pieces and add to a large glass bowl. Add in layers: celery, bell pepper, onion and frozen peas. Cover (seal) with mayonnaise dressing. Top with cheese, then bacon. Cover with plastic wrap. Refrigerate for 8-24 hours. Toss just before serving. YUM!!!!
