Nothing like a cold Monday morning to reflect on the weekend that kicked off with this hand-warming bowl of chickpea miso and mushroom ramen 🍄🍜 (and umeshu 🥃) from @shomen_ramen. The soup was the best part of the dish. It was more like a shoyu-type broth, a light soup with plennnty of flavour. The chickpea miso adding depth rather than any heavy starch. The sauted onions added delicious sweetness to the dish - and little onion burps post-meal. And yes, that egg tasted like every bit of perfection that it looks like. The noodles were juuust cooked so there was plenty of firm bite.
