These mushroom and cheese empanadas that have been baked are a tasty treat. With its earthy mushrooms and gooey cheese inside a flaky empanada shell, this treat makes your mouth water. They taste even better when you dip them in the sour aji criollo cilantro sauce.
Ingredients: 1 package of store-bought empanada dough. 2 cups of mushrooms, finely chopped. 1 cup of shredded mozzarella cheese. 1/2 cup of grated Parmesan cheese. 1/2 cup of diced onions. 2 cloves of garlic, minced. 1/4 cup of chopped fresh cilantro. 1/4 cup of aji criollo sauce. Salt and pepper to taste. 1 egg, beaten for egg wash.
Instructions: Turn on your oven and heat it up to 375F 190C. Put the minced garlic and diced onions in a skillet with a little oil. Cook them until the onions turn clear. Once you add the mushrooms that have been chopped up very small, keep cooking them until they release their water and get soft. Add pepper and salt to taste. Take the mushroom mix off the heat and let it cool down for a while. Put the sauted mushrooms, shredded mozzarella cheese, grated Parmesan cheese, and chopped cilantro in a large bowl. Combine well. To make empanadas, unroll the store-bought dough and use a round cutter to cut out circles of any size you want. Most circles are about 4-5 inches across. In the middle of each circle of dough, put a spoonful of the mushroom and cheese mixture. Stretch the dough into a half-moon shape, then press the edges together to seal them. For a nice look, you can crimp the edges with a fork. Beat an egg and brush it on top of the empanadas. This will make them golden brown when they're done baking. Put the empanadas on a baking sheet that has been lined with parchment paper. Bake them in a hot oven for 20 to 25 minutes, or until they are golden brown and crispy. Prepare the aji criollo cilantro sauce while the empanadas are baking. In a small bowl, mix the aji criollo sauce with chopped cilantro. The aji criollo cilantro sauce should be served with the hot mushroom and cheese empanadas so that people can dip them in it. Enjoy your tasty empanadas that you made yourself!
