I made ‘glass’ potato chip tacos. Filled with dry aged shaved duck and scotch macerated plums Inspired by the #crystalbread of #albertadria I followed a similar track but increased the potato starch and added a bit of corn starch with the kudzu. They take a long time to make but came out great! They are delicate but firm enough to hold the filling and we’re very popular! Amazing crunch and lingering potato flavor!
