Romantic Raspberry Champagne Cocktail

Say "cheers" to this festive drink with your special someone! 

Raspberry Champagne Cocktail

Chilled brut champagne Fresh raspberries for garnish 1 tablespoon raspberry coulis For the raspberry coulis 1 1/2 cup raspberries* 1/2 cup white sugar 1/4 cup water 1 tablespoon fresh lemon juice

Tip:  You can use fresh or frozen berries.  Frozen raspberries are picked at the peak of season with optimal sweetness. If you use fresh berries, you may need to adjust how much sugar you add depending on the sweetness—or tartness! 

In a medium saucepan, combine all ingredients for the raspberry coulis. Bring to a boil, stirring occasionally. Reduce heat, and continue stirring until sugar has dissolved. Let cool completely, then transfer to a blender. Blend until smooth. Pour raspberry mixture through a fine sieve. Refrigerate in an air-tight container for up to one week. For champagne cocktail, pour one tablespoon of raspberry coulis into each glass and top with champagne. Garnish with a fresh raspberry or two.
