do you have any thoughts on % fat content in milk? like, flavor, mouthfeel, usage, etc
I'm lactose intolerant, so I don't drink dairy milk. If I do try to drink it, I'm repulsed by the taste and texture. When I could bear to drink it, I had a preference toward whole milk because skim felt weird and watery to me. I don't cook/bake much with milk these days either, but if I did, I think whole milk works better, especially for baking.
These days, I'm quite happy with the prevelence of non-dairy milk! (Saves me from a lot of stomachaches and unfortunate trips to the bathroom). Which is kinda funny now that I think about it because most milk substitutes are probably more similar in texture to skim and fat-free milk. I love the taste of coconut milk for stuff like cereal and oatmeal. Otherwise, oat milk is the one I often reach for since that's usually cheaper/more available.
