Capturing the elusive Ginger Bug. 🐝 Day Two and she's bubbling. It's almost time to make some naturally lacto-fermented Ginger Beer! This is a starter which is a solution of organic sucanat (evaporated cane juice) and water to which I've added raw, grated organic ginger. I'm harnessing the beneficial Lactobacillus bacteria that is naturally present in ginger root. This starter culture will eventually ferment the sugars in our larger batch of "ginger tea" to give it a tangy, fragrant flavor and also naturally carbonate it.
