[PHOTOS] SilkAir introduces new menu for business class travellers
SilkAir, the full-service regional wing of Singapore Airlines, has just released a new “All-Time Favourites” menu for their Business Class customers.
Featuring 20 dishes drawn from Muslim, Indian, Chinese and Western cuisines, the menu features typical Singaporean favourites such as mee rebus, nasi lemak, chicken rice and fried carrot cake.
“The dishes we have curated for the All-Time Favourites menu is a reflection of SilkAir’s multi-cultural Singaporean heritage and also pays tribute to the 49 diverse destinations that we fly to,” said SilkAir’s chief executive Foo Chai Woo.
Travellers flying Business Class on SilkAir can choose one dish of their choice up to 24 hours in advance before their flight via the SilkAir or Singapore Airlines websites, through their respective reservations offices, or through travel agents.
The menu will be available for all meals - breakfast, lunch and dinner.
Travellers who do not indicate their choice before departure will still be able to choose from two standard meal options that will be available on each flight.

Singapore nasi lemak, coconut rice with otah otah, ikan bilis, sambal chilli, chicken and omelette
Sliced fish congee, sliced cream snapper porridge with ginger, spring onions and shallots
Singapore chicken rice served with Taiwan cabbage and chilli sauce
Fried carrot cake served with XO chilli sauce
Beef brisket noodles and assorted vegetables
Fried Hokkien mee served with belachan chilli
Tandoori chicken with lemon basmati rice and mattar paneer curry
Kal dosai, Indian pancake with chicken keema filling, sambar, megapodi idly and vadai
Chicken tikka masala served withe cauliflower and cumin basmati rice
Mutton masala with marrow and peas masala and coriander
Masala fish briyani with dhal and egg
Blueberry pancakes served with chicken sausage and apple raisin compote
Braised lamb stew in caraway sauce with oven roasted vegetables and risi bisi rice
Baked rosemary chicken thigh with rosemary and lemon jus, served with seasonal vegetables and roasted potatoes
Grilled beef tenderloin with black pepper sauce, with assorted vegetables and truffle mashed potatoes
Roasted salmon fillet with cilantro sauce, served with seasonal vegetables and mushroom pasta
