I’m always partial to cocktails that combine gin and Amaro, so when I saw this recipe online, I knew I had to try it. Originally created by @thereforesamiam, it calls for optional simple syrup which I chose not to add. For me, the Prosecco added plenty of sweetness and I didn’t want to drown out the herbal flavors of the gin or the bitterness of the Amaro. If you like a sweet touch, go for it though. Amaro’s (Amari) range in bitterness and sweetness and I chose to use one on the more bitter-side and that has a stronger anise flavor.

Ingredients
1 oz dry gin (St George Spirits)
.5 oz Amaro (S. Maria Al Monte)
.5 oz fresh squeezed lemon juice
Top with Prosecco
Directions
Shake all ingredients except Prosecco with ice.
Strain into a glass and top with Prosecco.
Garnish with lemon peel.
