Ingredients: 2 cups all-purpose flour. 1/4 cup granulated sugar. 2 tsp baking powder. 1/2 tsp salt. 1/4 tsp ground cinnamon. 1/4 tsp ground anise seed. 2 tbsp unsalted butter, melted. 1/2 cup whole milk. 1 tsp vanilla extract. 1 large egg. 1/2 cup fruit preserves apricot or preferred flavor. Vegetable oil, for brushing. Powdered sugar, for dusting.
Instructions: Preheat your oven to 375F 190C and line a baking sheet with parchment paper. In a mixing bowl, combine the flour, granulated sugar, baking powder, salt, ground cinnamon, and ground anise seed. In a separate bowl, whisk together the melted butter, milk, vanilla extract, and egg. Pour the wet ingredients into the dry ingredients and mix until a dough forms. Knead the dough gently for a minute or two until it's smooth. Divide the dough into small balls, about the size of golf balls. Flatten each ball into a small disc, then place 1 teaspoon of fruit preserves in the center of each disc. Fold the dough over the preserves, sealing the edges to form a bunuelo shape. Place the filled bunuelos on the prepared baking sheet. Lightly brush the bunuelos with vegetable oil to help them brown while baking. Bake in the preheated oven for 15-20 minutes or until they turn golden brown. Remove from the oven and let them cool slightly. Dust the baked bunuelos with powdered sugar while they are still warm.
