These apple cinnamon muffins are great for fall because they are vegan. They taste like apple and cinnamon and are soft and fluffy.
Ingredients: 1 1/2 cups all-purpose flour. 1/2 cup sugar. 2 teaspoons baking powder. 1/2 teaspoon salt. 1 teaspoon ground cinnamon. 1/2 cup unsweetened applesauce. 1/2 cup almond milk. 1/4 cup vegetable oil. 1 teaspoon vanilla extract. 1 cup diced apples.
Instructions: Preheat oven to 375F 190C and line a muffin tin with paper liners. In a large bowl, combine flour, sugar, baking powder, salt, and cinnamon. In a separate bowl, mix applesauce, almond milk, vegetable oil, and vanilla extract. Pour wet ingredients into dry ingredients and stir until just combined. Fold in diced apples. Spoon batter into muffin tin, filling each cup about 2/3 full. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Allow muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
