This Roasted Pork Loin with Apple Glaze is a delicious blend of sweet and savory flavors. Perfectly roasted, the soft pork loin is coated with a rich sauce that has been infused with apples. It's an ideal dish for cozy family dinners or special occasions.
Ingredients: 1 3-4 pounds boneless pork loin roast. Salt and black pepper to taste. 2 tablespoons olive oil. 1 cup apple juice. 1/2 cup apple cider vinegar. 1/4 cup brown sugar. 2 cloves garlic, minced. 1 teaspoon dried thyme. 1/2 teaspoon ground cinnamon. 1/4 teaspoon ground cloves. 2 apples, sliced. 2 tablespoons cornstarch. 2 tablespoons cold water.
Instructions: Preheat your oven to 375F 190C. Season the pork loin roast with salt and black pepper. In a large ovenproof skillet, heat the olive oil over medium-high heat. Add the pork loin roast and sear it on all sides until it's nicely browned, about 4-5 minutes per side. In a bowl, mix together the apple juice, apple cider vinegar, brown sugar, minced garlic, dried thyme, ground cinnamon, and ground cloves. Pour the apple mixture over the seared pork loin roast in the skillet. Arrange the sliced apples around the pork loin. Transfer the skillet to the preheated oven and roast for 45-55 minutes or until the internal temperature of the pork reaches 145F 63C. Remove the skillet from the oven, transfer the pork loin and apples to a serving platter, and cover them with foil to keep warm. In a small bowl, whisk together the cornstarch and cold water to make a slurry. Place the skillet with the pan juices on the stovetop over medium heat. Pour the cornstarch slurry into the pan juices and whisk constantly until the glaze thickens, about 2-3 minutes. Slice the roasted pork loin and drizzle the apple glaze over the top. Serve the Apple-Glazed Roasted Pork Loin with the caramelized apples and enjoy!
