Ingredients: 2 cups grated apple. 1/2 cup maple syrup. 1/4 cup almond milk. 1/4 cup coconut oil, melted. 2 teaspoons vanilla extract. 2 cups whole wheat flour. 1 teaspoon baking soda. 1/2 teaspoon baking powder. 1/2 teaspoon cinnamon. 1/4 teaspoon nutmeg. 1/4 teaspoon salt.
Instructions: Preheat the oven to 350F 175C. Grease a loaf pan. In a large bowl, mix grated apple, maple syrup, almond milk, coconut oil, and vanilla extract. In another bowl, whisk together whole wheat flour, baking soda, baking powder, cinnamon, nutmeg, and salt. Combine wet and dry ingredients until just mixed. Pour the batter into the prepared loaf pan. Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean. Allow to cool before slicing and serving.
