Ingredients: 4 boneless, skinless chicken breasts. 1/2 cup apricot preserves. 2 tablespoons coconut aminos. 1 tablespoon fresh ginger, grated. 2 cloves garlic, minced. 1/2 teaspoon ground black pepper. 1/4 teaspoon sea salt. 1 tablespoon coconut oil.
Instructions: Apricot preserves, coconut aminos, minced garlic, ginger, black pepper, and sea salt should all be combined in a small saucepan. Stirring constantly, heat over low to medium heat until thoroughly heated and well combined. Put aside. In a skillet set over medium-high heat, warm the coconut oil. On both sides, generously season the chicken breasts with salt and pepper. The chicken breasts should be cooked for 45 minutes on each side, or until they have a golden brown crust and are no longer pink in the middle. Put them in the hot skillet. After the chicken breasts are cooked, pour the apricot ginger glaze over them and turn down the heat. Simmer the glaze for two to three minutes, making sure the chicken is evenly coated.
