Arabic Ma'amul cookies are traditional Middle Eastern shortbread-like treats, often enjoyed during festive occasions. These cookies have a delicate semolina and flour exterior with a flavorful nut-filled interior.
Ingredients: 2 cups semolina. 1 cup fine wheat flour. 1 cup ghee. 1/2 cup powdered sugar. 1/4 cup milk. 1 tsp active dry yeast. 1/2 tsp ground cardamom. 1/4 tsp rose water. 1/4 cup chopped nuts walnuts, pistachios, or almonds.
Instructions: In a bowl, dissolve the yeast in warm milk and let it sit for 5 minutes. In a large mixing bowl, combine the semolina, wheat flour, ghee, powdered sugar, cardamom, and rose water. Add the yeast-milk mixture to the dry ingredients and knead into a soft dough. Cover the dough with a damp cloth and let it rest for 1-2 hours. Preheat the oven to 350F 175C. Divide the dough into small portions and shape each portion into a ball. Press your thumb into the center of each ball to create a small well. Fill the well with a mixture of chopped nuts. Seal the well and reshape the ball. Place the filled balls on a baking tray. You can decorate the cookies using specialized ma'amul molds, if available. Bake in the preheated oven for 15-20 minutes or until the cookies are golden brown. Remove from the oven and let them cool before handling.
