LES 101 MOTS DU CAFÉ

Deux milliards de tasses se vendent chaque jour dans le monde. Le café, cette boisson universelle, est un vecteur de lien social, son goût est connu de tous, ses parfums ancrés dans nos mémoires. Et pourtant, que sait-on de lui ?

  Hyppolite Courty, fondateur de l’Arbre à Café, a découvert le café en 2008, un peu par hasard. Lui, l’historien, qui n’en buvait pas, et ne l’appréciait guère, a eu comme « une révélation ». Il s’est mis à en boire et en reboire, il a découvert ses richesses et ses complexités, puis il a cherché d’où il venait, à savoir quelles étaient ses origines, comment il poussait et surtout comment on le torréfiait. Une dizaine d’années plus tard, son travail est reconnu, ses cafés servis dans les plus grandes tables et les meilleurs coffee shop de la capitale, et sa passion reste intacte. Engagé, curieux, devenu expert, il a eu la merveilleuse idée d’initier « Les 101 Mots du Café ».

  UN COLLECTIF D’AUTEUR

Hippolyte aurait très bien pu à lui seul inscrire tous les mots dans ce carnet de vocabulaire. Mais il a préféré partager, collaborer, susciter l’envie de s’exprimer autour du café. Les 101 mots ont donc été choisis puis distribués à un panel d’auteurs très variés. Parfumeur, cuisinier, pâtissier, torréfacteur, vigneron, designer, autant de professions qui racontent le café à travers un mot. Parfois théorique, parfois poétique, toujours instructifs, chacun des textes est singulier et permet d’en apprendre un peu plus sur le fameux nectar.

  LES CONTRIBUTEURS

Ils sont presque une centaine à avoir accepté l’invitation de « L’Arbre à Café » pour évoquer leur boisson préférée. Parmi eux le parfumeur Jean Michel Duriez, le pâtissier Pierre Hermé, la cheffe Anne Sophie Pic – qui signe également la préface -, le journaliste Stéphane Méjanès et bien d’autres. Tous ont su avec talent parler du Marc, d’arômes, d’acidité, de machine, de tout ce qui touche de près ou de loin au monde du café.

  Cet ouvrage est ludique, instructif, il se feuillette aussi bien qu’il se lit. Il se prend, s’ouvre, se referme, se laisse oublier pour qu’on y revienne un peu plus tard. Ce livre et ses mots vont longtemps rester, c’est sûr, votre compagnon de chevet.
