Paleo Apple Muffins

Paleo Apple Muffins
2 1/4 cups almond meal
4 omega 3 enriched eggs
1 organic apple finely chopped
1 very ripe banana
1/4 cup coconut oil
1/3 cup water
1/2 tsp baking soda
1 heaping tbsp cinnamon
Pre heat oven to 350. As pictured, have a two year old attack and kill an apple while you peel the banana and using a fork, mash the banana in the bottom of a large mixing bowl. Using a hand held chopper if you have one, finely chop the freshly killed apple, and add to the bowl. Add all other ingredients and mix by hand. The batter will not be super thick, but more like a cake batter. Using a bit more coconut oil, grease a muffin tin. Fill the tins about 3/4 of the way full. Bake for 15-17 minutes. You will know they are done when you can insert a toothpick into the middle of a muffin and it comes out clean. Serve hot out of the oven with some ghee melted on top, accompanied by eggs over-easy, and hot black coffee. If you eat them all at once, don’t blame me… Makes approximately 16 muffins.
I also make a variation of this and make them chocolate like by substituting the cinnamon for cocoa powder and adding in carob (or sometimes dark choc) chips!

I wish... the only strength exercises I've been doing have been pushups and various types of crunches. I can only hope that it later turns out to be muscle and the fat just hasn't caught up yet.

If it weren't my cousin's name, it'd be Monica. But since it is my cousin's name, maybe CJ or Allison, for reasons I'm too embarrassed to explain.

Recently I've been taking 30 minutes every weekday to just clean whatever in the house. It's AMAZING how much you can get done.
4. Have you ever had something happen to you that you thought was bad but it turned out to be for the best? If so, what was it?
My hubs and I were going to relocate a few years back, but the job fell through and we ended up meeting some amazing friends here at home!
5. What was the last experience that made you a stronger person?
The shit-storm of stress my life has been for the past month.
6. What do you miss most about being a kid?
Not paying and/or worrying about money and bills.
7. When was the last time you were really nervous?
Probably when meeting old students.

Not paying my rent. Today.

Four days ago. Thinking about how we weren't going to be able to pay for rent.
