The Art of Food! An Adventure of restructuring whole meat muscles.
All night I tossed and turned as the ancient origins of meat curing and preservation, the use of sodium nitrite, our current quest to restructure whole meat with Transglutaminase milled through my mind. Antagonists kept coming in accusing me of not being "natural"; that they are true "artisans" and we are only commercial and evil. I finally fell asleep when the "artisan curers" were silenced. I woke up refreshed, made myself a great cup of coffee and re-wrote the article. Here it is. . . :-)
