I celebrate Christmas myself, mostly in the form of enjoying food, but holiday meals are a bit difficult to have a feast when one person is disabled and the other can't cook complex things.
This year, though not a necessarily "cheap" meal, it also wasn't as expensive, energy taxing, and more food than we could reasonably eat in only a few days like usual turkey dinners are.
I'm sharing here in case anyone wants to have decent portions of festive feeling food without having to pay an arm and a leg per disappointing serving from a delivery restaurant like we did last year!
What dinner consisted of:
Hot rotisserie chicken
Slice of ham steak
Microwaveable mashed potatoes
Boxed stuffing
Vegetable platter
Gravy
Cranberry sauce
Dinner rolls
Things we had to cook/heat up:
Mashed potatoes (wife heated them in a pot, but it is microwavable too)
Gravy mix
Boxed stuffing
Ham steak (fried on both sides, but had microwave option)
We ordered the groceries at the intended time for eating so the chicken would stay hot. Cooking and assembly took only 15ish minutes total. My wife was the one heating the items but I checked up on them often, and am sure it could be prepared the same way on the stove while sitting.
I've never tried making gravy or stuffing in the microwave but I've heard of it being done, if that's easier for some of y'all!
