Ingredients: 1 cup quinoa, rinsed. 2 cups water. 2 ripe avocados, mashed. 1/4 cup olive oil. 1/4 cup maple syrup. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/2 teaspoon salt. 2 cups quinoa flour. 1/2 cup almond flour. 1/4 cup ground flaxseeds. 1/4 cup chia seeds. 1/4 cup chopped fresh cilantro. 1/4 cup chopped green onions. 1/2 cup diced cherry tomatoes. 1/2 cup shredded vegan cheese. Sesame seeds for topping.
Instructions: Mix quinoa and water in a saucepan. Bring to a boil, then lower the heat and let it cook for 15 minutes with the lid on. Take it off the heat and let it cool down. Warm the oven up to 375F 190C and grease a muffin tin. Put mashed avocados, olive oil, and maple syrup in a large bowl and mix them together. In a bowl, mix together salt, baking soda, quinoa flour, almond flour, ground flaxseeds, and chia seeds. Mix everything together well. The cooked quinoa, cilantro, green onions, cherry tomatoes, and vegan cheese should all be carefully mixed in. Fill up every muffin tin cup all the way to the top with batter. Add sesame seeds on top. After the oven is hot, bake the buns for 25 to 30 minutes, or until they are golden brown and a toothpick stuck in the middle comes out clean. The buns should cool in the pan for 10 minutes before being moved to a wire rack to cool all the way down. You can eat these quinoa avocado bread buns as a healthy snack or with your favorite toppings.
