A simple but classy summer appetizer with grilled shrimp that are juicy and served over avocado mash. This dish is great for a light meal on a hot day or a party because it is full of flavor and healthy fats.
Ingredients: 1 lb shrimp, peeled and deveined. 2 ripe avocados. 2 tbsp olive oil. 2 cloves garlic, minced. 1 lime, juiced. Salt and pepper to taste. Chopped cilantro for garnish.
Instructions: Warm the grill up to a medium-high level. Mix shrimp with lime juice, salt, pepper, and 1 tablespoon of olive oil in a bowl. Grill shrimp for two to three minutes on each side, or until they are pink and fully cooked. In a different bowl, mash the avocados with the rest of the olive oil, lime juice, salt, and pepper until the mixture is smooth. Put grilled shrimp on top of avocado mash and sprinkle chopped cilantro on top.
