Mountain Clay
These avocado popsicles are great for hot summer days because they are creamy and cool. Avocado makes it taste extra rich, and honey and coconut milk make it sweet. Plus, they're full of good fats and fiber!
Ingredients: 2 ripe avocados. 1/2 cup coconut milk. 1/4 cup honey or maple syrup. 1/2 teaspoon vanilla extract. Juice of 1 lime. Pinch of salt.
Instructions: Peel and pit the avocados, then place them in a blender. Add the coconut milk, honey or maple syrup, vanilla extract, lime juice, and a pinch of salt to the blender. Blend until smooth and creamy. Pour the mixture into popsicle molds, leaving a little space at the top for expansion. Insert popsicle sticks into each mold. Freeze for at least 4 hours, or until the popsicles are firm. To remove the popsicles from the molds, run warm water over the outside of the molds for a few seconds. Serve and enjoy!
