These Low Carb Chocolate Avocado Pudding Pops are a delicious and healthy treat that's perfect for satisfying your sweet tooth while sticking to a low-carb diet. Creamy avocado and rich cocoa powder come together to create a decadent chocolate pudding that's both satisfying and guilt-free.
Ingredients: 2 ripe avocados. 1/4 cup unsweetened cocoa powder. 1/4 cup almond milk. 2 tablespoons powdered erythritol or your preferred low-carb sweetener. 1 teaspoon vanilla extract. 1/4 teaspoon salt. 1/4 cup sugar-free chocolate chips.
Instructions: Cut the avocados in half, remove the pits, and scoop out the flesh into a blender or food processor. Add the cocoa powder, almond milk, powdered erythritol, vanilla extract, and salt to the blender or food processor with the avocado. Blend everything until you have a smooth and creamy chocolate mixture. You may need to stop and scrape down the sides a few times to ensure everything is well combined. Once the mixture is smooth, fold in the sugar-free chocolate chips with a spatula. Spoon the chocolate avocado pudding mixture into popsicle molds, filling each one evenly. Insert popsicle sticks into each mold and freeze for at least 4 hours or until the pudding pops are completely set. To remove the pops from the molds, briefly run each mold under warm water to loosen the pudding pops. Carefully pull them out and enjoy!
