I idea no what I was doing here, but needed to use up the baby spinach and so… baked an omelette with piquillo peppers and feta, with spinach on top. Then flipped it and topped with grated manchego, rolled it up and baked it a bit more. Topped it with grated parmesan and sautéed garlic al whisky.
