Ingredients: 4 slices bacon, cooked and crumbled. 2 large eggs. 1/2 cup shredded mozzarella cheese. 1/4 cup almond flour. 1/4 teaspoon baking powder. 1/4 avocado, sliced. 4 oz smoked salmon. 1/4 cup pickled onions.
Instructions: Warm up your mini waffle maker. Whisk the eggs, shredded mozzarella, almond flour, and baking powder together in a bowl until everything is well mixed. Add the cooked and broken up bacon and mix it in. Put half of the batter into a waffle maker that has already been heated. Cook for four to five minutes, or until the waffle is golden brown and crispy. Do it again with the rest of the batter. Put slices of avocado, smoked salmon, and pickled onions on top of each chaffle. Serve right away and enjoy!
