A typical type of pasta made in Bologna, the “balanzoni” (the name comes from the Carnival, Dr Balanzone, typical of the city), filled with ricotta, mortadella and boiled spinach. I combined them with pistachio pesto and the final result was just yummy 🍝😋😋😋 I must admit that Bolognese cuisine has a lot of gastronomic masterpieces 👌🏻
